Baked, excellent for a low-carb dinner, nothing complicated and not very long lasting. At one point I was fed up with eggplant with mozzarella and tropata and the net after other recipes for cooking eggplant. And you come across this recipe that sounds promising. And it looks even more promising. So we set to work hard to test something else.

I sprinkled the spices on top and wrapped the eggplant in aluminum foil to hold it tightly with everything in it and put it in the oven for about 30 minutes. Then I took out the foil and to make sure it was well done, I put it back in the oven for 10 minutes. Then I went out and ate because there was not much left to do.

Carbs are excellent: about 15 grams of carbs for eggplant because you can't eat them with a spine.

  • 100 grams of fatty cheese
  • oil
  • salt and pepper to taste.

In a bowl, beat the eggs together with the milk and season with salt and pepper, then add the chopped cheese and mix well.

Heat 2-3 tablespoons of oil in a pan, then pour the omelette. Leave it on the fire for a minute, then with a spatula turn it on the other side. Remove from the pan and serve, preferably, with chopped green parsley on top, for extra freshness.

About Bratkartoffeln & # 8211 tips and hints useful

In Germany and Austria I have eaten these Bratkartoffeln many times as a side dish to steaks or schnitzels. Basically there are slices of french fries in the pan to which onions and some smoked meat are added (ribs, kaiser). Some recipes include boiled potatoes, others raw potatoes.

The few tips for the success of this recipe are:

  • potato variety: special fried potatoes or salads ("soaps", not floury) are used to preserve their shape and texture

If you follow these tips you will eat the best roasted German fried potatoes or Bratkartoffeln!

From the quantities below results 2-3 servings of Bratkartoffeln. The cooking time of 10 minutes is the frying time and does not include the time of boiling the potatoes in the shell (approx. 40-45 minutes). You can use boiled potatoes from the previous day.

Usually, the ingredients are available to everyone, so you definitely have cheese, eggs, cheese or potatoes in the fridge.
You can also involve the children in the preparation of this pudding, who will surely be delighted to peel the boiled potatoes and mix them in the eggs. Potato pudding with cheese can be served with ketchup and various green leaf salads.

Ingredients 4 servings / Preparation time 1 hour

800 gr potatoes boiled in shell, 250 gr Telemea cheese, 100 gr cheese, 2 eggs, 200 gr 18% fermented sour cream, salt and pepper to taste, 50 gr butter.

Method of preparation

In a bowl add: grated cheese and cheese, sour cream, eggs, salt and pepper to taste.

Mix until you get a homogeneous composition.

The boiled potatoes are peeled and cut into suitable slices.

In a heat-resistant dish (greased with butter) we place a layer of potatoes, alternately with a layer of cheese composition.

We will get 3 layers of potatoes and 3 layers of cheese composition.

Bake the pudding at 180C for 25 minutes, or until a nice crust forms.

California potatoes with baked ham

Mix until completely homogenous. Form 6 meatballs from the obtained composition.

Place in the oven tray lined with baking paper. Flatten by hand until you get discs of equal size.

Grease with olive oil.

Bake for 15 minutes at 200 degrees Celsius.
Remove the tray from the oven. Cover half of the meatballs with 3 slices of ham.

Place the remaining meatballs on top.

Cover with a slice of fresh mozzarella.

Put a few pieces of bacon on top.

Bake for another 10 minutes at 220 degrees.

Serve warm and in moderation!

1 large slice of ham

Prepare the dough by mixing all the ingredients. We then let it rest for about 15 minutes, while we prepare the filling.
Saute onion, ham and bacon in a tablespoon of oil. Temper only until the onion becomes glassy, ​​so that it does not turn golden.

Beat eggs and mix them with finely chopped rosemary, onion, ham and bacon.

Mix the cheeses, then pour them over the eggs. Season with salt and pepper and mix to homogenize the composition.

Spread the dough with your hand in the form. We pricked him with a fork from place to place. Put diced boiled potatoes over the dough, then pour the egg mixture.

Put the tray in the preheated oven at 180 ° C for 45 minutes. That's all!
