The potato scones they are a nice idea for a greedy and tasty appetizer. The procedure is quite simple and, after cooking the potatoes, not too long. Once the dough is prepared, you can fill the scones as you prefer, with cold cuts, cheeses, grilled vegetables ... This time I went for the classic with cooked ham and Asiago-type cheese, and they were really delicious! In practice, these scones are the small version of my potato pizza and, with their small shape, they are even more appetizing: P
How to make potato scones
First wash the potatoes well under running water, then boil them for about 35 minutes or until they are well cooked (skewer one with a fork, if the prongs go in and out easily, the potatoes are ready).
While still hot, peel the potatoes.
Mash the potatoes, then add the yolk, Parmesan, salt and flour and mix until you get a homogeneous mixture.
Roll out the dough with the help of a little flour, then make circles with an 8 cm pastry cutter (you will need 2 circles for each muffin).
Fill half of the circles with cheese and ham, then close each muffin with a second circle and seal the edges well.
Heat a non-stick pan with a little oil and cook the scones over medium heat, a few minutes per side, just long enough for the cheese inside to melt and to create a golden crust on the outside.
The potato scones are ready, let them cool slightly (just so as not to burn yourself with the cheese) and serve.
