Falafels are great chickpea meatballs very popular in the Middle East, it is a dish based on chopped chickpeas with onion, garlic, cumin, parsley and coriander. Felafels are usually served piping hot, wrapped in pita bread along with tahini sauce, a sesame seed dip, or yogurt sauce, and accompanied by fresh vegetables.
The chickpeas to be used to prepare the falafel must be dry and must be softened in water for at least 12 hours before being used raw, then soak them the night before.

How to make falafel

Put the dried chickpeas in a bowl with water and a pinch of baking soda and leave to soak for 12 hours

Drain the chickpeas well, arrange them in a bowl together with the chopped onion, parsley, garlic, cumin seeds, coriander, salt and pepper

Put all the ingredients in a mixer and chop until you get a homogeneous mixture

With the mixture obtained, form meatballs that you will gradually place on a plate.
Put the felafel in the fridge for 1 hour

Then heat the oil in a pan and fry the felafels until they are a nice brown color.

Lift, drain on absorbent paper and Serve the felafel on a bed of green salad
