Fried calamari are a delicious, tasty second dish and, usually, appreciated by everyone. There fried calamari it is a favorite preparation in every season of the year it is a dish that smells of the sea, and for me it has the flavor of summer and holidays and it is perhaps for this reason that more than many other dishes that I love, this remains one of mine favorite.
There are two recipes for preparing fried calamari, and they differ in the breading, one, the most common, is made with flour alone, the other, with the use of batter. For my personal taste, the former wins, perhaps also because it is the only way we have ever fried squid in my house.

How to make fried calamari
Wash the squid with plenty of cold running water.
Remove the transparent cartilage fin by pulling it out with your fingers.
Then detach the head from the cloak and, with the help of scissors, remove the eyes.
Eliminate the horny beak found in the center of the tentacles and remove the skin of the squid.
Rinse them again under running water and cut the cloak into rings about 1 cm thick.
Dab them with absorbent paper to remove excess water.
At this point, bread them by transferring them into the flour and turning them over several times.
Before frying them, move them gently to make sure that the excess flour is removed.
In a pan with hot oil, fry the squid a little at a time for about 3-4 minutes, or until they are golden brown.
Lift them with a slotted spoon and let the excess oil dry by placing them on absorbent paper.
Salt them according to your taste and bring the fried squid to the table hot.
