This water-based shortcrust pastry is vegan and very light: without butter and without eggs, to satisfy those who are on a diet or simply want to avoid animal derivatives. Obviously the classic shortcrust pastry is another thing, but if you want to treat yourself to a sweet without many guilt feelings, this could be the right recipe. An example? You can make us some nice biscuits filled with homemade jam, like I did, and serve a healthy and delicious snack to your children :)

How to make water-based shortcrust pastry
Mix the water and oil in a bowl.
Add sugar, salt, yeast, flour and flavorings.
Knead until you get a homogeneous dough.
Let the pastry rest for 15 minutes at room temperature, covered with a cloth, then use it to prepare pies and biscuits.
I made some jam filled cookies. I rolled out the pastry on a floured surface.
I made some rounds with an 8 cm pastry cutter.
I stuffed them with some homemade orange marmalade.
And I closed in a half moon, sealing the edges with a fork.
With this dose you get 15-20 cookies. Place them on a baking sheet lined with parchment paper.
And cook for about 10 minutes in a preheated convection oven at 180 ° C. Remember that being without egg they will remain very light, be careful not to overcook them otherwise they will be hard!
