The lemon cream is a fragrant and tasty preparation, ideal to make for filling cakes or fruit tarts. Its citrusy flavor makes it one of my favorite desserts, I do not hide from you that I often prepare it for myself in the afternoon for a snack: P
The lemon custard is a variant of the classic prepared with the addition of vanilla, if you have never tried it, with this recipe it's time to try it. Are you ready? So arm yourself with spoons because you will brush it in no time :)

Method

How to make lemon cream

Whip the egg yolks with the sugar, add the starch and milk and mix with a whisk. Transfer the mixture to a saucepan and cook the cream with a lemon peel.

Cook the lemon cream over low heat, stirring constantly to avoid lumps. As soon as the cream begins to thicken, add the filtered lemon juice.

Then remove the lemon zest and use the lemon cream as you prefer.
