Blinis are a kind of round and puffy scones, a kind of salty pancakes, typical of Russian cuisine. Method

How to make blinis

Separate the yolk from the white and beat the yolk in a bowl with the milk.

Then add the flour and baking powder and continue mixing.

Let the dough rest for about 1 hour.

Now add the whipped egg white to the mixture with a pinch of salt.

Stir gently so as not to disassemble the mixture.

Heat and grease a non-stick pan with a little oil, when it is hot put a ladle of dough.

After a couple of minutes, turn the blini with the help of a spatula and brown the other side as well.

Spread the cheese on each blinis.

Then place a piece of smoked salmon, garnish with a sprig of chives and serve.
