  1. Heat the oil in a large frying pan over medium-high heat. Add the venison chunks and cook until nicely browned on the outside and almost cooked through.
  2. Prepare the beef flavoured rice mix according to package instructions. While the rice is cooking, add the venison, green pepper, red pepper and onion. Simmer until rice is done and peppers are tender.

This was very good! However, I baked the venison tips in the oven for 3 hours to get it just right tender. As you know, wild game is tough unless you take special care with it. A crockpot would cook it tender, too, but I didn't have all day to wait. I then added it to the rice mixture. My huband loved this and so did I. Thanks!-29 Nov 2005

This was an excellent supper. Very easy to throw together. I substituted the beef rice mix for Zatarain's Dirty Rice mix which was on hand and has more flavor. Will make again and again.-09 Jan 2007

This recipe couldn't have been easier! I followed the recipe exactly and my 7 year old ate 3 helpings! Venison always sits in our freezer because I am too lazy to do all the weird things people recommend to get rid of the gamey flavor, but this recipe was sooooo easy that I will probably make it again soon. Crawfish and Venison Rice Dressing

Bored with the same old sides at the Thanksgiving table? Try adding a bit of Cajun spice to your meal with this Timber2Table version of the classic Creole dish. Similar to dirty rice but without its traditional livers and gizzards, rice dressing is one of those family recipes that get handed down from generation to generation. Go to a church potluck dinner in Louisiana, and you are likely to find multiple versions. They’ll all be slightly different, but they will all be delicious.

This version features seasoned ground venison along with Louisiana crawfish tails. While this time of year isn’t traditional crawfish season, frozen tails are readily available. Just like shrimp, look for Louisiana or other domestically caught crawfish. Avoid imported products, where quality can sometimes be suspect. Use a quality long-grained rice. I’m partial to Carolina Gold for its mild, slightly nutty flavor and perfect starch content.

Ingredients

1 1/2 cups uncooked long grain rice

1 pound of crawfish tails, thawed

1 can (10.5 ounce) cream of mushroom soup

1 can (10.5 ounce) French onion soup

1 small sweet yellow onion, diced

4 tablespoons of butter, melted

2 teaspoons Cajun seasoning

1/2 teaspoon garlic powder

1 can (14-ounce) chicken broth

Cooking Instructions

Start by heating 1 tablespoon of oil in a skillet over medium-high heat. Add the diced onion and pepper.

Sauté until the onions are soft and translucent. Add the ground venison. Season with salt, sage and black pepper. Continue cooking another 5 to 8 minutes until the venison has browned and just cooked through.

Pour the meat, onion and pepper mixture into a large mixing bowl. Add remaining ingredients.

Stir well to blend. The mixture will be wet at this point, but the rice will absorb the moisture.

Turn out into a buttered 9x13 baking dish. Cover loosely with foil and bake at 350 degrees for 50 minutes. Remove the foil and continue cooking for an additional 10 minutes to crisp the top.

Step 1

In a large resealable plastic bag, combine flour and pepper. Add
venison shake to coat. In a Dutch oven, brown meat in oil. Add
water, broth and bouillon bring to a boil. Reduce heat cover and
simmer for 1-1/4 hours. Stir in the potatoes, onion, carrots and
rice return to a boil. Reduce heat cover and simmer for 30-40
minutes or until vegetables and rice are tender.

Made this recipe for the first time last night. I did not use tomato paste (only cause I forgot to put it on my shopping list). It was amazingly delicious!! My husband is not a big fan of cream based sauces, and he loved it.

1 pound dry small Camilla red beans
1 ½ tablespoons of butter

3. Add beans, ham shank stock and bay leaf to pot. Bring to a boil. Reduce to a simmer and cover. Simmer for 1 ½ hours or until beans are very tender.

4. Remove ham shanks from pot and set aside. Allow meat to cool slightly, then shred with a fork. Return meat back to pot and add Worcestershire sauce and creole seasonings to taste. Cover and cook for another hour or until the mixture gets thick and creamy. Season with hot sauce, salt and pepper. Serve over rice.

8 cups low sodium chicken stock

1. Combine all ingredients in a medium stockpot. Bring meat to a boil over high heat. Reduce heat to low and cover with a lid. Cook meat at a steady simmer until tender, about 4 to 5 hours.

2. Remove hocks with a slotted spoon and put them in a large bowl. Strain the cooking liquid and discard vegetables and herbs. Let hocks cool in braising liquid.

3. After hocks cool, fork pull meat off bone into bite-sized chunks. Discard bones and most of the fat, also reserve shank stock for beans. Use pulled hock meat to turn a soup into a hearty meal.


Venison Pepper Steak Recipe

2-3 lbs venison steak sliced thin
1 onion, chopped
1 red bell pepper, sliced into strips
1 green bell pepper, sliced into strips
3 to 4 cups beef broth
1 clove garlic, minced
2 TBS soy sauce
2 TBS sugar
2 to 4 TBS wine (to taste)
4 oz fresh mushrooms, sliced

chow mein noodles, garnish
cooked white rice

Sear the outside of the venison steak in hot oil.  Do not cook at this point.  Add the minced garlic, onion and peppers.  Cook until almost cooked through.  Add the beef broth, soy sauce, sugar, wine and mushrooms.  Heat until everything is hot.

Add enough cold water to make a thin paste with the cornstarch.  Add equal amount of the hot broth from the pan to the cornstarch mixture.  Mix well and return back to the pan and stir until thickened. 

Serve over white rice and top with chow mein noodles.  Enjoy this folks.

1/2 tsp homemade onion powder
3/4 cup homemade beef broth
3 tsp cornstarch
2 TBS orange juice concentrate, thawed
2 TBS homemade soy sauce
1 onion, sliced in strips
2 cups fresh broccoli florets
1/2 yellow bell pepper, sliced
1/2 cup sliced mushrooms
1/2 to 1 cup sliced water chestnuts
white rice, cooked

Combine the broth, soy sauce and orange juice concentrate together and whisk well set aside. In another small bowl, add the cornstarch and a little water to make a paste.

Heat 3 TBS of the infused canola oil on high in a wok or large heavy skillet. Add the venison strips and sprinkle with the additional garlic powder and cook, stirring frequently. Pour this mixture into a bowl and set aside for now.

Add another 3 TBS of the garlic canola oil to the skillet and now add the onion strips and broccoli cook until tender crisp. Now place the cooked venison back into the pan with the water chestnuts and pour the broth mix over all when hot add the cornstarch paste and stir cooking quickly until thickened. Serve over hot white rice.

I was wondering if anyone had any ideas or recipes to share that use canned venison. I have been canning it all weekend and would like some yummy recipes to use this winter.

About canned venison, I always can it if I am lucky enough to get some. Here is a recipe that I have adapted from my mom's recipe from when I was a little girl. All my kids love it!!
Deer (or elk) meat and rice. Can use any wild game. I even use beef when its cheap
Make a full recipe of rice. I immagine any rice would work but I have always used long grain white rice. Chop about 1/2 (or more) cups of both celery and onion. Saute them in about 2 Tabls. butter. Next add to the veggies, I quart of the canned venison, plus the juices. Let it come to a simmer and season with salt and pepper and at least 1 teaspoon of curry powder. I use more. to this mixture, and simmer. Next I add an additional can of consomme or beef broth. simmer and slightly thicken with cornstarch mixed in water until dissolved. Now add it to the rice, put in a casserole and bake at about 350 for 30 minutes. It is so good. Wish I had some venison right now!!

This is very easy to do. Take some portabello mushrooms and slice and a onion and dice and fresh garlic and parsley. Saute the onions in butter just a tblp or two and when lightly browned add mushrooms and saute hard add garlic and parsley then mix add to that a port wine or any full body red about 1/2 cup. bring to a simmer then add your venison and return to a simmer. Season with a little beef base thicken with either a roux or cornstarch and water your choice. You do not want it super thick. Put over egg noodles, mashed potatoes, rice, puff pastry, baked potatoes what ever you like. You can even add fresh or dried thyme to this and add a little sour cream and use it that way.

I just canned 16 wide mouthed pints of chunks of fresh venison that was shot yesterday. I had my granddaughter paint the bottom and sides of the jars with olive oil which was in a quart jar filled with our own garlic. I filled each jar half way and salted with a tiny bit of sea salt and some dried onion flakes. Filled the jar the rest of the way up and a tiny bit of salt on top and boiled the jar lids, screwed the tops on and placed into my American Pressure Cooker. In 75 minutes I will have 16 pints of deer meat ready to use this winter. Hoping my hubby or someone gets another deer so we can grind up some ground meat too. Dad got the rest of the deer to make kielbasa.

I raw can venison in large chunks, stew size and ground. I like canning venison for a few reasons. 1. it's the easiest thing that there is to can. stuff it in a jar, no need to add anything, pressure cook for 90 mins. 2. my freezer space is left open for my produce and made ahead meals and 3. dinner is practically ready when i get home from work.

I use canned ground in everything-tacos, sauces, casseroles.
Stew size chunks I use by crock potting the normal beef stew
veggies with a can of mushroom soup & some beef base, then when I get home I toss in the venison chunks until heated.

Bigger chunks I use for pulled 'beef' and put on rice, in sandwiches, on tatoes.


Can I stir fry without a wok?

While it is traditional to stir-fry in a wok, a large, non-stick frying pan will work well.

The important thing is to have all your ingredients cut into pieces that are nearly the same size. This way, they will cook more evenly, which is incredibly important when cooking at a high heat. If the pieces differ too much in size, the larger pieces may be under-done, while the smaller ones burn.
