Ingredients

  • 1 cup fresh flat-leaf parsley leaves
  • 1 cup fresh cilantro leaves and tender stems, plus more for serving
  • 1 teaspoon ground coriander
  • Kosher salt, freshly ground pepper
  • 2 tablespoons olive oil, plus more for grill
  • Lemon wedges, for serving

Recipe Preparation

  • Toast fennel and cumin seeds in a small dry skillet, over medium-high heat, tossing often, until fragrant, about 1 minute; let cool, then chop, or coarsely grind in a spice grinder.

  • Transfer fennel and cumin to a food processor along with onion, garlic, parsley, cilantro, mint, and coriander, and process until very finely chopped, scraping down sides of bowl as needed. Transfer mixture to a large bowl, add lamb, season with salt and pepper, and, using your hands, gently mix together until evenly combined. Chill mixture at least 1 hour.

  • DO AHEAD: Lamb mixture can be made up to 1 day ahead; keep chilled.

  • Prepare grill for medium-high heat and lightly oil grill grates. Divide lamb mixture into 8 portions. Form each portion into a 5”-long sausage shape. Insert a metal skewer lengthwise through each portion. Drizzle with oil and grill, turning occasionally, until just cooked through (do not overcook or the kefta will be dry), 8–10 minutes.

  • Meanwhile, mix together yogurt, tahini, and ¼ cup water in a small bowl until smooth; season with salt and pepper.

  • Serve kefta with yogurt sauce, cilantro, and lemon wedges. Serve with warm pita.

Lamb Kefta Kebabs

Note: You can grind your own lamb shoulder meat to use in this recipe, if desired. You’ll need eight metal skewers to grill the lamb if you only have wooden skewers, soak them in water for 30 minutes before using. You can serve the kebabs, as I have, in pita pockets as an entrée or as an appetizer, still on the skewers, with dipping sauce alongside. Toasting and grinding whole spices sounds tedious, but it adds a remarkable amount of flavor don’t skip this step.

Serves 4 as an entrée 8 as an appetizer

Kebabs
1 teaspoon cumin seeds
3/4 teaspoon black peppercorns
1/2 teaspoon fennel seeds
1/3 star anise pod
1 clove
Pinch fenugreek seeds (optional)
1 teaspoon grated nutmeg
1 teaspoon sweet paprika
Pinch ground cardamom
Pinch ground cinnamon
1/4 cup finely chopped cilantro, stems and leaves included, plus more leaves, for serving
One 1-inch piece of fresh ginger, peeled and grated
1 garlic clove, minced
1 1/2 teaspoons kosher salt
1 teaspoon dried sumac
1 1/2 pounds ground lamb
1 teaspoon canola oil

Tahini-Yogurt Sauce
1/2 cup plain whole milk Greek yogurt
1/2 cup tahini
1/2 cup water, plus more as needed
Salt and freshly ground black pepper

Extra-virgin olive oil, for grilling
1/2 lemon, plus additional lemon wedges, for serving
Pita bread, for serving
Cucumber slices, for serving

To make the kebabs: Combine the cumin seeds, peppercorns, fennel seeds, star anise, clove and fenugreek (if using) in a small skillet. Place over medium heat and toast until fragrant, about 90 seconds. Add the nutmeg, paprika, cardamom and cinnamon to the skillet and toast, stirring constantly, until fragrant, about 15 seconds. Immediately transfer to a spice grinder or a mortar and grind or pound to form a smooth powder. Transfer to a large bowl and wipe out the skillet.

Add the cilantro, ginger, garlic, salt and sumac. Mix well. Add the lamb and, using your hands, gently mix with the spices until uniform. Heat the canola oil in the now-clean skillet over medium heat. When the oil is shimmering, add about a tablespoon of the lamb mixture. Cook until no longer pink in the center, 2 to 3 minutes. Taste the cooked lamb mixture and adjust seasonings if desired.

Cover the remaining lamb mixture with plastic wrap and refrigerate for at least 1 hour, or up to 24 hours.

Meanwhile, make the tahini-yogurt sauce: In a medium bowl, whisk together the yogurt, tahini, and water. Add more water, 1 teaspoon at a time, until the sauce reaches your desired consistency. Season to taste with salt and pepper.

When you’re ready to grill, pull of the lamb mixture from the fridge and divide it into eight even portions. Shape each portion into sausages about 5 inches long. Stick one sausage onto each skewer and drizzle with a little olive oil.

Heat a gas or charcoal grill to about a medium-high heat. Clean and grease the cooking grates. Grill the kebabs until they reach about 130ºF in the center, 3 to 4 minutes per side. Remove the kebabs from the grill and let rest for 5 to 10 minutes. Squeeze the lemon half over the kebabs and remove the meat from the skewers.

Serve the kebabs in pita bread pockets with cilantro, cucumbers and the tahini-yogurt sauce, with additional lemon wedges on the side.

In a large bowl, gently stir together meat, onion, parsley, oil, cumin seeds, cinnamon, salt, and pepper just to combine (do not overmix). Form 1/4 cup of meat mixture into a 3-inch-long oval and place on a rimmed baking sheet brushed with oil. Repeat with remaining mixture. Refrigerate, covered, at least 1 hour and up to 1 day.

Heat grill for direct heat (or a grill pan over medium-high). Thread each meat oval onto a skewer. Brush grill grates with oil. Grill kebabs, turning as needed, until cooked through and charred in spots, and a thermometer inserted in middles (avoiding skewers) registers 140 degrees (for medium-rare) for lamb, 6 to 8 minutes or 165 degrees for turkey, 10 to 12 minutes. Serve with pitas and accompaniments.


Grilled Lamb Kofta Kebabs with Pistachios and Spicy Salad Wrap

1 pound trimmed shoulder or neck fillet of lamb, chopped into 1-inch chunks
2 heaping tablespoons fresh thyme leaves
1 level tablespoon ground chili pepper
1 level tablespoon ground cumin
4 level tablespoons sumac, if you can find any, or 1 lemon, zest finely grated
Sea salt and freshly ground black pepper
A good handful shelled pistachio nuts
A few handfuls mixed salad leaves, such as romaine, endive and arugula, washed, spun dry and shredded
A small bunch fresh mint, leaves picked
1 red onion, peeled and very finely sliced
1 lemon
A bunch of fresh flat-leaf parsley, leaves picked
Extra-virgin olive oil
4 large flatbreads or tortilla wraps
4 heaping tablespoons plain yogurt

Place the lamb in a food processor with most of the thyme, chili, cumin and sumac (reserving a little of each for sprinkling over later), a little salt and pepper and all the pistachios. Put the lid on and keep pulsing until the mixture looks like ground meat.

Divide the meat into 4 equal pieces and get yourself 4 skewers. With damp hands, push and shape the meat around and along each skewer. Press little indents in the meat with your fingers as you go - this will give it a better texture when cooked.

In a bowl, mix the salad leaves and mint. In another bowl, combine the sliced onion with a good pinch of salt and pepper and a squeeze of lemon juice (the acidity will take the edge off and lightly pickle the raw onion). Scrunch this all together with your hands, then mix in the parsley leaves.

Grill the kebabs until nicely golden on all sides. Dress your salad leaves and mint with a splash of extra-virgin olive oil, a squeeze of lemon juice and some salt and pepper. Meanwhile, warm the flatbreads for 30 seconds on the griddle pan or under the broiler, then divide between plates and top each with some dressed salad leaves and onion. When your kebabs are cooked, slip them off their skewers onto the flatbreads - you can leave them whole or break them up as I've done here. Sprinkle with the rest of the sumac, cumin, chili and fresh thyme, and a little salt and pepper. Now either toss the salads, grilled meat and juices together on top of the flatbreads and drizzle with some of the yogurt before rolling up and serving or let your friends toss theirs together at the table, then dress and roll up their own, drizzled with some extra-virgin olive oil.

Grilled Lamb Kofta Kabab Sandwiches

We always love food on a stick and these savory Grilled Lamb Kofta Kabab Sandwiches will kick up your taste buds and put a smile on your face. They are spicy! They are juicy! They are awesome!

What is Kofta?

In the Lebanese cuisine, Kofta refers to spicy ground meat. You can cook the meat in the oven, skillet or on the grill. The mixture can be formed into patties or meatballs or shaped into a cylinder-log, impaled on a one-inch flat metal skewer and grilled.

We are grilling our &lsquologs&rsquo on wooden skewers and using ground lamb in our recipe. If you are not a lamb lover, ground beef or pork will be delicious.

The ground lamb is infused with an awesome blend of spices, chopped fresh parsley and onion. We shaped the lamb mixture into six, eight-inch logs and inserted a wooden skewer in the center, right down the length of it and put them on the charcoal grill. We grilled these babies for about eight minutes to a medium doneness, rolling them every couple of minutes for even grilling.

Tahini Yogurt Sauce:

To complete these incredible-tasting sandwiches we made an easy tahini-yogurt sauce in our mini-food processor. This creamy sauce, has a tangy-lemon flavor that is a perfect compliment to the spices in the lamb.

Set out the condiments of lettuce, mint leaves, and cucumber sticks on a plate along with warm pita bread. The Lebanese Garlic Sauce and the Tahini-Yogurt sauce are served in small dishes so everyone can put their own sandwich together.

Make your sandwich:

First, we slathered a warm pita bread with our Lebanese Garlic Sauce and added fresh mint leaves, lettuce, and cucumber sticks.

Then we nestled a juicy kabab on the bed of lettuce mix, and we dressed it up with the tahini-yogurt sauce and wrapped the warm pita bread blanket around it.

This is so good you just might want seconds!

Juicy Lamb Meatballs with Moroccan flavours!

Monday Meatball Mania is here! On the last Monday of every month, Jo from Jo Cooks and I each share a meatball recipe, because we both believe that ball shaped food rocks (fabulously high ratio of golden brown surface to juicy meat inside) and there should be more of it in this world.

This month I’m sharing Moroccan Lamb Meatballs, inspired by a visit to the Lakemba Night Markets during Ramadan (26 May – 24 June 2017).

Ramadan is a holy month for Muslims which involves intensive prayer and fasting from dawn to dusk. During this period, the main drag of Lakemba transforms at night with food stalls lining the pavements and is a popular place to enjoy iftar, a communal feast to break the fast.


Harissa Marinated Grilled American Lamb Kabobs

Combine the lamb with the harissa and toss to coat. Season with salt and pepper and allow to marinate, covered, in fridge for 4 to 6 hours.

Preheat your grill and clean your grill grate.

On a clean work surface, arrange the chopped vegetables, lamb, and skewers. Thread the skewers, alternating lamb and veggie combos to fill each skewer. Arrange the kabobs over the hot grill and cook until lamb is done and vegetables have a bit of char and are tender, rotating as you cook.

Carefully remove from the grill and arrange on a platter to serve.

Serve with fresh grilled naan bread, fruits, olives, and couscous salad, if desired.
