Cherry cake

Wash the cherries and clean the seeds. Put in a bowl with the sugar, mix and leave for a few minutes then put in a strainer to drain the syrup left.

Beat the eggs together with the salt well, then add the sugar and mix until it becomes a creamy composition. Pour a little oil, then milk and orange peel. Mix the flour with the baking powder and pour over the composition, stirring gently until smooth.

Pour the composition into a tray lined with baking paper, place the drained cherries on top and put in the preheated oven at 180 degrees for about 35-40 minutes (test with a toothpick). Remove the tray and leave to cool.

The syrup left by the cherries is boiled with the sugar for a few minutes. The cake, when it is still warm, is portioned in the tray and pour the syrup over it. Leave to cool and then serve. Good appetite!
